Dear Trecciano Winery Friends and Enthusiasts,

With this first article, we are opening a series of insights related to our wines, to the territory of the Senese Hills, to local cuisine, and to cultural events that animate the district of Siena and its province.
Where to begin but from the beginning. Today we’d like to talk about ‘un primo’ = ‘the first’, and in other words ‘first course’! Thanks to a great collaboration with the restaurant “L’ Orto & un Quarto” from Siena, we are presenting to you the recipe of their Spaghetti in Chianti (of course!)

Spaghetti in Chianti

Ingredients for 4 people

350 gr big spaghetti
100 gr bacon
½ onion
5 tablespoons of EVO Olive Oil
4 glasses of Chianti Colli Senesi DOCG
Salt and pepper
Vegetable broth

Preparation

  • Slice the onion and cut the bacon into small cubes; Put it all into a large sauté pan with EVO Oil.
  • As soon as the onion browns slightly, salt and pepper the onions and then wet them with a glass of Chianti. Let simmer and let it withdraw.
  • Now add uncooked spaghetti and slowly add vegetable broth. The broth will allow the spaghetti to cook (observe the cooking time indicated for spaghetti).
  • Near the end of the cooking process, add one half a cup of Chianti and cook at high temperature until all the wine has been absorbed.
  • Serve Spaghetti al Chianti with freshly ground pepper.
